Easy Weeknight Meal: Slow Cooker Creamy Chicken, Green Beans, & Potatoes




We hope that you are having an amazing week!! If you are like many families juggling various things during the week, dinner becomes a last minute thing. Our new segment will help you! We plan to drop meals on the blog occasionally. Now let’s get to it. This crockpot meal is so easy and convenient for any night of the week. Very simple ingredients and easy to prep!! The slow cooker is our favorite. We probably use it two to three times a week honestly. It saves a lot of time and it’s easy to clean!! Serving: 4   Prep Times: 10 Minutes     Cook Time: 3-6 Hours Total Time: 3-6 Hours

Ingredients:
·        2 chicken breast
·        Olive oil
·        1 cup of chicken broth
·        Kosher salt and freshly ground black pepper, to taste
·        2 pounds of golden or red potatoes
·        1 can of Campbell's cream of chicken soup
·        Add your favorite seasoning ***This is optional  ( I used Garlic powder, Trader Joes Everyday seasoning, Trader Joes 21 seasoning salute and Old Bay Seasoning)
·        One small onion
·        2 cups of Fresh or Frozen Green Beans (Substitute or Add more of your favorite veggies)

Coat the bottom of the crockpot with olive oil. Add seasoned chicken. Layer seasoned potatoes on the chicken and top the potatoes with green beans and chopped onion. Mix chicken broth and Campbell’s cream of chicken soup in a separate bowl. Pour mixture on top of everything.  Set your crock pot on High for 3 hours (Low setting for 6 hours). Stir and serve with your choice of rice and garlic bread.
